- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 cups mashed ripe bananas (about 4 bananas)
- For the cinnamon sugar swirl: 3 tablespoons unsalted butter, melted; 3 tablespoons granulated sugar; 3 tablespoons dark brown sugar; 2 tablespoons ground cinnamon
Instructions
- Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
- In a large bowl, combine melted butter and granulated sugar. Mix in eggs and vanilla extract, then gradually stir in flour and baking soda until just combined. Fold in mashed bananas gently.
- In a separate bowl, mix melted butter with sugars and cinnamon for the swirl.
- Layer half of the batter into the prepared pan, dollop with half of the cinnamon mixture, and gently swirl using a knife. Repeat with remaining batter and swirl mixture.
- Bake for 60-70 minutes until golden brown; check doneness with a toothpick.
- Allow cooling in the pan for at least 30 minutes before transferring to a wire rack.
