  • 1 and 1/2 cups mashed ripe bananas (about 4 bananas)
  • For the cinnamon sugar swirl: 3 tablespoons unsalted butter, melted; 3 tablespoons granulated sugar; 3 tablespoons dark brown sugar; 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a large bowl, combine melted butter and granulated sugar. Mix in eggs and vanilla extract, then gradually stir in flour and baking soda until just combined. Fold in mashed bananas gently.
  3. In a separate bowl, mix melted butter with sugars and cinnamon for the swirl.
  4. Layer half of the batter into the prepared pan, dollop with half of the cinnamon mixture, and gently swirl using a knife. Repeat with remaining batter and swirl mixture.
  5. Bake for 60-70 minutes until golden brown; check doneness with a toothpick.
  6. Allow cooling in the pan for at least 30 minutes before transferring to a wire rack.
