  • 2 lbs potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 cups kale or cabbage, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream (or coconut cream)
  • Salt and black pepper to taste

Instructions

  1. Prepare all vegetables by washing and chopping them into small pieces.
  2. In a large pot over medium heat, add a splash of vegetable broth and sauté the onions and garlic until softened.
  3. Add the carrots and cook for another 5 minutes.
  4. Stir in the diced potatoes along with the remaining vegetable broth. Bring to a boil, then reduce heat to simmer until potatoes are tender (about 15-20 minutes).
  5. Blend the soup until smooth using an immersion blender or by transferring it in batches to a traditional blender.
  6. Return the blended soup to the pot and stir in chopped kale or cabbage; simmer for an additional 5-7 minutes until greens are tender.
  7. Finally, mix in heavy cream (or coconut cream) and season with salt and black pepper to taste.
