Ingredients
- 2 lbs potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 cups kale or cabbage, chopped
- 4 cups vegetable broth
- 1 cup heavy cream (or coconut cream)
- Salt and black pepper to taste
Instructions
- Prepare all vegetables by washing and chopping them into small pieces.
- In a large pot over medium heat, add a splash of vegetable broth and sauté the onions and garlic until softened.
- Add the carrots and cook for another 5 minutes.
- Stir in the diced potatoes along with the remaining vegetable broth. Bring to a boil, then reduce heat to simmer until potatoes are tender (about 15-20 minutes).
- Blend the soup until smooth using an immersion blender or by transferring it in batches to a traditional blender.
- Return the blended soup to the pot and stir in chopped kale or cabbage; simmer for an additional 5-7 minutes until greens are tender.
- Finally, mix in heavy cream (or coconut cream) and season with salt and black pepper to taste.
