  • 1oz unsalted butter
  • 250g granulated sugar
  • 90g Dutch cocoa powder
  • 2oz vegetable oil
  • 1oz light corn syrup
  • 1 tbsp pure vanilla extract
  • 1 large egg yolk
  • 1 large egg
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cornstarch
  • 60g all-purpose flour
  • 2oz chocolate (chips or chunks)
  • 12oz good quality chocolate for ganache
  • 6oz heavy whipping cream for ganache
  • 1 tbsp butter for ganache
  • Rainbow candy-coated chips for garnish

Instructions

  1. Preheat oven to 350°F (180°C). Line a 9×13 inch baking pan with foil and grease.
  2. In a saucepan, combine water, butter, sugar, corn syrup, and cocoa powder. Heat until melted and combined (about 2-3 minutes), then cool for 5 minutes.
  3. Stir in vegetable oil, vanilla extract, egg yolk, and whole egg until fully blended.
  4. Mix in baking soda, salt, and cornstarch; then gently fold in flour and chocolate chips until just combined.
  5. Pour batter into the prepared pan and bake for about 14–18 minutes. Check doneness with a toothpick for moist crumbs.
  6. Allow to cool completely before adding ganache.
