- 1oz unsalted butter
- 250g granulated sugar
- 90g Dutch cocoa powder
- 2oz vegetable oil
- 1oz light corn syrup
- 1 tbsp pure vanilla extract
- 1 large egg yolk
- 1 large egg
- 1/8 tsp baking soda
- 1/2 tsp salt
- 1 tbsp cornstarch
- 60g all-purpose flour
- 2oz chocolate (chips or chunks)
- 12oz good quality chocolate for ganache
- 6oz heavy whipping cream for ganache
- 1 tbsp butter for ganache
- Rainbow candy-coated chips for garnish
Instructions
- Preheat oven to 350°F (180°C). Line a 9×13 inch baking pan with foil and grease.
- In a saucepan, combine water, butter, sugar, corn syrup, and cocoa powder. Heat until melted and combined (about 2-3 minutes), then cool for 5 minutes.
- Stir in vegetable oil, vanilla extract, egg yolk, and whole egg until fully blended.
- Mix in baking soda, salt, and cornstarch; then gently fold in flour and chocolate chips until just combined.
- Pour batter into the prepared pan and bake for about 14–18 minutes. Check doneness with a toothpick for moist crumbs.
- Allow to cool completely before adding ganache.
