- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup fresh spinach, chopped
- 1/2 cup dried cranberries
- 1/2 cup walnuts, roughly chopped
- 1/4 cup red onion, finely diced
- 1/4 cup olive oil
- 1/4 cup orange juice (fresh preferred)
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine chickpeas, chopped spinach, dried cranberries, walnuts, and red onion.
- In a small bowl or jar, whisk together olive oil, orange juice, honey (or maple syrup), salt, and pepper until well blended.
- Pour the vinaigrette over the salad mixture and toss gently until everything is evenly coated.
- Adjust seasoning if needed by adding more salt or pepper.
- Optionally chill in the refrigerator for about 10–15 minutes before serving for enhanced flavor.
