  • 2 rings (13 ounces each) beef sausage, sliced
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons minced garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium-high heat, heat vegetable oil and brown the beef sausage for 7-9 minutes. Remove and set aside.
  2. In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper for about 10-12 minutes until softened.
  3. Sprinkle flour over vegetables; stir well and cook for another minute.
  4. Pour in chicken broth, whole milk, and Worcestershire sauce. Stir to combine and bring to a simmer.
  5. Add browned beef sausage and rinsed beans to the pot. Simmer on medium-low for about 15-20 minutes until thickened.
