- 1 tablespoon vegetable oil
- 2 rings (13 ounces each) beef sausage, sliced
- 3 tablespoons unsalted butter
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons minced garlic
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 1 cup whole milk
- 2 cans Great Northern white beans, rinsed and drained
- Fresh parsley for garnish
Instructions
- In a large pot over medium-high heat, heat vegetable oil and brown the beef sausage for 7-9 minutes. Remove and set aside.
- In the same pot, melt butter and sauté onion, carrots, garlic, salt, and pepper for about 10-12 minutes until softened.
- Sprinkle flour over vegetables; stir well and cook for another minute.
- Pour in chicken broth, whole milk, and Worcestershire sauce. Stir to combine and bring to a simmer.
- Add browned beef sausage and rinsed beans to the pot. Simmer on medium-low for about 15-20 minutes until thickened.
