Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable broth
- 1 cup heavy cream (or coconut cream for a vegan option)
- 1 package (16 oz) gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the onion until translucent.
- Add garlic, carrots, and celery; cook until softened.
- Pour in the vegetable broth and bring to a gentle boil. Stir in the heavy cream or coconut cream.
- Add gnocchi to the simmering soup and cook until they float to the top.
- Just before serving, add fresh spinach and season with salt and pepper.
