  • 1/8 tsp salt
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 3/4 cup whole milk
  • 1/2 cup water
  • 3 tbsp unsalted butter
  • 1/2 cup castor sugar
  • 1/2 cup unsalted butter
  • Thinly sliced orange peel
  • 3/4 cup orange juice
  • 1/3 cup fruit juice (substitute for orange liqueur)

Instructions

  1. In a mixing bowl, whisk together the flour, granulated sugar, and salt.
  2. Add in the eggs one at a time, mixing well after each addition.
  3. Pour in the vanilla extract, whole milk, and water; whisk until smooth.
  4. Let the batter rest for about 30 minutes to allow air bubbles to settle.
  5. Heat a non-stick skillet over medium heat and melt 1 tablespoon of unsalted butter.
  6. Pour about 1/4 cup of batter onto the skillet while tilting it to spread evenly.
  7. Cook for about 2 minutes until lightly browned; flip with a spatula and cook another minute on the other side.
  8. Repeat until all batter is used, stacking cooked crepes on a plate.
  9. In another pan, melt 1/2 cup unsalted butter over medium heat.
  10. Stir in castor sugar until dissolved; add sliced orange peel and cook briefly.
  11. Pour in orange juice and stir well; let simmer until slightly thickened.
  12. Fold each crepe into quarters or roll them up.
  13. Place them in the warm orange sauce; allow them to absorb flavors for about 2 minutes.
