- 1 pound ground beef
- 3 medium russet potatoes
- 4 medium carrots
- 1 medium onion
- 1 can diced tomatoes (14 oz)
- 2 cups beef broth
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoons Italian seasoning
- 1 teaspoon onion powder
- 2 teaspoons minced garlic
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked; drain excess grease.
- Peel and chop potatoes, carrots, and onion.
- In the slow cooker, add the browned beef followed by the diced vegetables.
- In a mixing bowl, combine diced tomatoes, beef broth, salt, pepper, Italian seasoning, onion powder, and minced garlic; mix well.
- Pour the mixture over the ingredients in the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until vegetables are tender.
