Instructions
- Begin by dicing the potatoes and onion, then mince the garlic.
- Layer the diced chicken at the bottom of the crockpot, followed by the diced potatoes, chopped onion, corn, and minced garlic.
- Pour in enough low-sodium chicken broth to submerge all ingredients, then add heavy cream or milk for creaminess.
- Season with salt and pepper to taste and stir gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
- Shred the chicken directly in the crockpot using forks and give it a good stir before serving.
