Ingredients
- 1 pound cubed beef
- 4 cups low-sodium beef broth
- 2 large carrots
- 2 ribs celery
- 1 small onion
- 4 cloves garlic
- 1 can diced tomatoes
- 1 pound potatoes
- Fresh or frozen green beans
- Marinara sauce
- Canned or frozen corn
Instructions
- Brown the cubed beef in a skillet with oil over medium-high heat. Transfer to a slow cooker.
- In the same skillet, sauté chopped carrots, celery, and onion until softened. Stir in garlic, tomato paste, salt, parsley, thyme, paprika, and pepper for one minute.
- Add the sautéed vegetables to the slow cooker along with broth, chopped potatoes, diced tomatoes (with juice), green beans, marinara sauce, corn, and a bay leaf.
- Cook on low for 7 to 8 hours until the beef is tender. Adjust seasonings before serving hot.
