  • 4 cups low-sodium beef broth
  • 2 large carrots
  • 2 ribs celery
  • 1 small onion
  • 4 cloves garlic
  • 1 can diced tomatoes
  • 1 pound potatoes
  • Fresh or frozen green beans
  • Marinara sauce
  • Canned or frozen corn

Instructions

  1. Brown the cubed beef in a skillet with oil over medium-high heat. Transfer to a slow cooker.
  2. In the same skillet, sauté chopped carrots, celery, and onion until softened. Stir in garlic, tomato paste, salt, parsley, thyme, paprika, and pepper for one minute.
  3. Add the sautéed vegetables to the slow cooker along with broth, chopped potatoes, diced tomatoes (with juice), green beans, marinara sauce, corn, and a bay leaf.
  4. Cook on low for 7 to 8 hours until the beef is tender. Adjust seasonings before serving hot.
