Ingredients
- ½ cup granulated sugar
- ¼ tsp salt
- 4 large navel oranges (zested and juiced)
- 5 large egg yolks
- ¼ cup lemon juice
- 1 rosemary sprig
- 6 Tbsp unsalted butter
Instructions
- In a saucepan, mix sugar, salt, and orange zest until combined.
- Add egg yolks, orange juice, and lemon juice; whisk together.
- Cook on low-medium heat while stirring continuously for about 10-15 minutes until thickened.
- Stir in rosemary and continue cooking for another 5 minutes.
- Strain the mixture into a bowl over chopped butter; whisk until smooth.
- Cover directly with cling wrap and chill in the refrigerator for at least an hour before serving.
