Ingredients
- 1 pound boneless, skinless chicken breast
- 1/4 cup low-sodium soy sauce
- 1/4 cup pineapple juice
- 1 tablespoon honey or brown sugar
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1 tablespoon cornstarch
- 1 cup pineapple chunks
- 1 medium red bell pepper, diced
- 2 cups cooked rice
Instructions
- Prepare your ingredients by chopping the chicken and bell pepper, and mincing the garlic.
- Heat olive oil in a large skillet over medium-high heat. Sauté chicken until golden brown (5-7 minutes). Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds, then add soy sauce, pineapple juice, honey, and stir well.
- Mix in cornstarch to thicken; cook for an additional minute.
- Return chicken to skillet along with pineapple chunks and diced bell pepper. Stir until everything is well-coated with sauce and heated through (about 5 minutes).
- Serve over warm cooked rice and garnish with sliced green onions.
