Ingredients
- 500g ground beef
- 1 cup bread crumbs
- 1 medium onion
- 1 large egg
- 250ml heavy cream
- 4 cups chicken or beef broth
- 2 medium carrots
- 2 medium potatoes
- Fresh parsley (for garnish)
Instructions
- Prepare the ingredients by chopping the onion, carrots, and parsley. In a mixing bowl, combine the ground beef with breadcrumbs, chopped onion, and egg; mix thoroughly and shape into small meatballs.
- In a large pot, heat some oil over medium heat. Add the sautéed carrots and diced potatoes; cook until softened.
- Pour in the broth and bring to a gentle simmer; let it cook for about 10 minutes to allow flavors to develop.
- While the soup simmers, heat a frying pan over medium heat. Brown the meatballs on all sides before adding them to the soup.
- Add the browned meatballs to the simmering soup and stir in the heavy cream gently; heat until warmed through and serve hot garnished with fresh parsley.
