Ingredients
- 500 g beef mince
- 4 large tortillas
- 250 g Mexican-flavored microwave rice
- 200 g fresh salsa
- 400 g black beans
- 125 g grated mozzarella
- 2 tsp sunflower oil
- 1 onion (peeled and chopped)
- 1 tsp mild chilli powder
- 1 tsp sweet smoked paprika
- 2 tsp ground cumin
- 1 tbsp dark brown sugar
- 3 tbsp tomato puree
- 1 beef stock cube (undiluted and crumbled)
- 100 ml boiling water
- Salt and freshly ground black pepper
Instructions
- Heat sunflower oil in a skillet over medium heat. Add beef mince and cook for about 5 minutes until browned.
- Stir in chopped onion, mild chili powder, smoked paprika, ground cumin, and brown sugar. Cook for another 5 minutes until onions soften.
- Add tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer covered for 15 minutes, stirring occasionally.
- While the beef cooks, heat tortillas and microwave rice according to package instructions.
- Assemble burritos by laying out each tortilla and adding rice, beef mixture, salsa, black beans, and cheese before rolling tightly.
