  • 500 g beef mince
  • 4 large tortillas
  • 250 g Mexican-flavored microwave rice
  • 200 g fresh salsa
  • 400 g black beans
  • 125 g grated mozzarella
  • 2 tsp sunflower oil
  • 1 onion (peeled and chopped)
  • 1 tsp mild chilli powder
  • 1 tsp sweet smoked paprika
  • 2 tsp ground cumin
  • 1 tbsp dark brown sugar
  • 3 tbsp tomato puree
  • 1 beef stock cube (undiluted and crumbled)
  • 100 ml boiling water
  • Salt and freshly ground black pepper

Instructions

  1. Heat sunflower oil in a skillet over medium heat. Add beef mince and cook for about 5 minutes until browned.
  2. Stir in chopped onion, mild chili powder, smoked paprika, ground cumin, and brown sugar. Cook for another 5 minutes until onions soften.
  3. Add tomato puree, crumbled beef stock cube, boiling water, salt, and pepper. Simmer covered for 15 minutes, stirring occasionally.
  4. While the beef cooks, heat tortillas and microwave rice according to package instructions.
  5. Assemble burritos by laying out each tortilla and adding rice, beef mixture, salsa, black beans, and cheese before rolling tightly.
