  • 1/2 cup Yellow Onion, chopped
  • 1 Poblano Pepper, chopped
  • 2 cups Shredded Chicken
  • 1 can Black Beans (15 oz; drained)
  • 1/2 cup Frozen Corn
  • 3 cups Chicken Broth
  • 1/2 cup Heavy Cream
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Cumin
  • 1/2 tsp Kosher Salt
  • Freshly cracked Black Pepper to taste
  • 2 tsp fresh Lime Juice
  • Finely chopped Cilantro for garnish

Instructions

  1. In a large saucepan over medium heat, melt butter and sauté the onion and poblano pepper with half the seasoning until tender.
  2. Stir in shredded chicken, black beans, corn, broth, and remaining seasoning. Simmer uncovered for 15 minutes.
  3. Reduce heat slightly; stir in cream and cheese until melted. Simmer for an additional 15 minutes.
  4. Add lime juice to taste before serving in bowls garnished with cilantro.
