Ingredients
- 1 cup freshly squeezed lemon juice (about 5–6 lemons)
- 1 Tbsp lemon zest (from approximately 2 lemons)
- 1 3/4 cups sugar
- 4 large eggs
- 1/2 cup salted butter
Instructions
- Prepare a water bath by filling a medium saucepan with 2 inches of water and bringing it to a boil.
- In a heatproof mixing bowl, whisk together lemon juice, lemon zest, sugar, and eggs. Add cubed butter.
- Place the bowl over simmering water and whisk continuously for 20-25 minutes until thickened.
- Strain the curd through a fine mesh sieve into a glass bowl to remove lumps.
- Cover immediately with plastic wrap pressed against the surface to prevent film formation.
- Allow to cool at room temperature before refrigerating for at least 4 hours or overnight.
