Ingredients
- 10.5 cups water or vegetable broth
- 1 yellow onion
- 2 celery ribs
- 3 carrots
- 4 garlic cloves
- Salt (to taste)
- 1 cup pastina (or small pasta shape)
- Parmigiano cheese (for garnish)
Instructions
- In a large pot, bring water or vegetable broth to a boil. Add onion, celery, carrots, garlic, and salt.
- Reduce heat to medium-low and simmer for 45 minutes until veggies are soft.
- Transfer cooked vegetables to a blender with two ladles of broth and blend until smooth. Return the mixture back to the pot.
- Cook pastina separately according to package instructions until al dente.
- To serve, place cooked pastina in bowls and pour hot broth over it. Garnish with freshly grated Parmigiano cheese.
