Ingredients

  • 10.5 cups water or vegetable broth
  • 1 yellow onion
  • 2 celery ribs
  • 3 carrots
  • 4 garlic cloves
  • Salt (to taste)
  • 1 cup pastina (or small pasta shape)
  • Parmigiano cheese (for garnish)

Instructions

  1. In a large pot, bring water or vegetable broth to a boil. Add onion, celery, carrots, garlic, and salt.
  2. Reduce heat to medium-low and simmer for 45 minutes until veggies are soft.
  3. Transfer cooked vegetables to a blender with two ladles of broth and blend until smooth. Return the mixture back to the pot.
  4. Cook pastina separately according to package instructions until al dente.
  5. To serve, place cooked pastina in bowls and pour hot broth over it. Garnish with freshly grated Parmigiano cheese.
