- 2 large yellow onions, thinly sliced
- ¼ cup (60 g) red apple vinegar
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- 1 ½ cups (360 g) beef broth
- 1 package (16 ounces) potato gnocchi, uncooked
- 1 ½ cups (169.5 g) Gruyère cheese, shredded
- parsley, for garnish
Instructions
- In a heavy-bottomed skillet, heat olive oil and butter over medium heat. Add sliced onions and sauté for 15-20 minutes until deeply caramelized.
- Stir in red apple vinegar and cook until evaporated. Season with salt, black pepper, and garlic powder.
- Pour in beef broth and Worcestershire sauce; stir to combine and bring to a simmer.
- Add uncooked gnocchi; simmer for 3-5 minutes until tender.
- Sprinkle Gruyère cheese over the top and broil for 2-3 minutes until melted and golden.
- Carefully remove from oven, garnish with parsley, and serve immediately.
