- 6 to 8 cups dark greens (e.g., spinach, kale, chard)
- 1 navel orange
- 1 Cara Cara orange
- 1/4 cup thinly sliced red cabbage (optional)
- 1/2 cup toasted pepitas
- 1/4 cup dried sweetened cranberries or cherries
- 1/4 cup crumbled feta cheese or dairy-free alternative
- 2 Tbsp chopped fresh green onions, chives or dill
- 1/4 cup Canola Oil
- 1 Tbsp cranberry orange infused vinegar or white apple vinegar
- 1 Tbsp Orange Juice Concentrate
- 1 Tbsp Honey
- Salt & Pepper to taste
Instructions
- Prepare the oranges by removing the peel and slicing them into half-moons.
- On a large platter, spread the dark greens and add red cabbage for extra crunch if desired.
- Layer sliced oranges, toasted pepitas, dried cranberries or cherries, crumbled feta cheese, and fresh herbs on top.
- In a screw-top jar, mix vinaigrette ingredients: canola oil, vinegar, orange juice concentrate, honey, salt, and pepper. Shake well.
- Serve the vinaigrette on the side for guests to dress their salads.
