Ingredients

  • 6 to 8 cups dark greens (e.g., spinach, kale, chard)
  • 1 navel orange
  • 1 Cara Cara orange
  • 1/4 cup thinly sliced red cabbage (optional)
  • 1/2 cup toasted pepitas
  • 1/4 cup dried sweetened cranberries or cherries
  • 1/4 cup crumbled feta cheese or dairy-free alternative
  • 2 Tbsp chopped fresh green onions, chives or dill
  • 1/4 cup Canola Oil
  • 1 Tbsp cranberry orange infused vinegar or white apple vinegar
  • 1 Tbsp Orange Juice Concentrate
  • 1 Tbsp Honey
  • Salt & Pepper to taste

Instructions

  1. Prepare the oranges by removing the peel and slicing them into half-moons.
  2. On a large platter, spread the dark greens and add red cabbage for extra crunch if desired.
  3. Layer sliced oranges, toasted pepitas, dried cranberries or cherries, crumbled feta cheese, and fresh herbs on top.
  4. In a screw-top jar, mix vinaigrette ingredients: canola oil, vinegar, orange juice concentrate, honey, salt, and pepper. Shake well.
  5. Serve the vinaigrette on the side for guests to dress their salads.
