- 6 slices turkey bacon, chopped into 1-inch widths

- 1.5 to 2 pounds green beans, trimmed and chopped into 1-inch lengths
- 1 pound potatoes, peeled and diced
- 3 to 4 cups stock
- 1/4 cup sour cream
- 1 teaspoon savory, dried
- Salt and pepper, to season
Instructions
- In a medium saucepan over medium-high heat, cook chopped turkey bacon until crispy.
- Add chopped onion and sauté until softened.
- Stir in green beans, potatoes, savory, salt, pepper, and stock; bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 20-30 minutes.
- Blend one-third of the soup until smooth, then mix back into the pot with remaining soup.
- Stir in sour cream and adjust seasoning before serving.
