- 1 whole chicken (cut into quarters)
- 1/2 cup grated ginger (squeezed for juice)

- 1 cup oil
- 1/2 teaspoon salt
Instructions
- In a large pot, bring enough water to cover the chicken by about 5 cm to a boil. Add the chicken pieces and boil for 5 minutes.
- Turn off the heat, cover the pot, and let it poach for 40 minutes. Check doneness by ensuring juices run clear when pierced.
- In a bowl, mix grated ginger, chopped spring onion, and salt. Heat oil in a small pot until hot and carefully stir in the ginger scallion mixture.
- Cut the poached chicken into pieces, toss with the ginger scallion sauce, and garnish with green spring onion before serving.
