- 8 bone-in chicken thighs
- ⅓ cup extra-virgin olive oil
- ¼ cup lemon juice
- 4 garlic cloves (minced)
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons Dijon mustard
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper in a mixing bowl.
- Place chicken thighs in a large bowl and pour the marinade over them. Cover and refrigerate for 1 to 8 hours.
- Preheat oven to 350°F (180°C). Transfer chicken to a baking dish and drizzle any remaining marinade on top.
- Bake for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). Optionally broil for an additional 2-3 minutes for crispy skin.
