  • 8 bone-in chicken thighs
  • ⅓ cup extra-virgin olive oil
  • ¼ cup lemon juice
  • 4 garlic cloves (minced)
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  2. Place chicken thighs in a large bowl and pour the marinade over them. Cover and refrigerate for 1 to 8 hours.

  4. Bake for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). Optionally broil for an additional 2-3 minutes for crispy skin.
