- 1 lb ground beef (or ground turkey)
- 2–3 roasted green chiles (like Hatch or poblano)
- 2 medium tomatoes (diced)
- 1 large potato (peeled and diced)
- 1 onion (finely chopped)
- 2 cloves garlic (minced)
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp dried oregano
- Salt and pepper (to taste)
- ¼ cup beef broth or water
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic for an additional minute.
- Add ground beef (or turkey) to the skillet; break it up as it cooks. Season with salt, pepper, cumin, coriander, and oregano. Brown the meat thoroughly.
- Stir in diced tomatoes and roasted green chiles, followed by diced potatoes and peas if desired.
- Pour in beef broth or water. Bring to a simmer, cover the skillet, and reduce heat to cook for about 20 minutes until potatoes are tender.
- Taste and adjust seasoning before serving hot in tacos or over rice.
