  • 23 roasted green chiles (like Hatch or poblano)
  • 2 medium tomatoes (diced)
  • 1 large potato (peeled and diced)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic for an additional minute.
  2. Add ground beef (or turkey) to the skillet; break it up as it cooks. Season with salt, pepper, cumin, coriander, and oregano. Brown the meat thoroughly.
  3. Stir in diced tomatoes and roasted green chiles, followed by diced potatoes and peas if desired.
  4. Pour in beef broth or water. Bring to a simmer, cover the skillet, and reduce heat to cook for about 20 minutes until potatoes are tender.
