Ingredients
- 1 lb boneless, skinless chicken thighs
- 1/2 cup soy sauce (or tamari)
- 1/4 cup brown sugar
- 1/2 cup pineapple juice
- 1/4 cup ketchup
- 2 tbsp vegetable oil (or olive oil)
- 1 tbsp fresh ginger (minced)
- 2 cloves garlic (minced)
- 1 tbsp rice vinegar (or apple cider vinegar)
- Chopped green onions (for garnish)
Instructions
- In a mixing bowl, combine soy sauce, brown sugar, pineapple juice, ketchup, vegetable oil, ginger, garlic, rice vinegar, and black pepper to make the marinade. Mix well.
- Add chicken thighs to the marinade and coat thoroughly. Let marinate for at least 10 minutes.
- Preheat your grill to medium heat and lightly oil the grates.
- Remove chicken from marinade and grill for about 6–8 minutes on each side or until the internal temperature reaches 165°F.
- Let rest briefly before garnishing with green onions and serving hot.
