Ingredients
- 1 ½ lbs boneless, skinless chicken breasts
- ¾ lb whole grain penne pasta
- 3 red bell peppers, stemmed and halved
- 4 green onions
- Kosher salt and freshly cracked black pepper
- ¼ cup + 2 tbsp balsamic vinegar
- 2 tsp lemon zest
- 2 tbsp lemon juice
- 4 garlic cloves, minced
- ½ cup olive oil, plus more as needed
- ¼ cup chopped parsley
- ½ cup basil leaves, roughly torn
Instructions
- Preheat grill or grill pan over medium-high heat.
- Season chicken and bell peppers with salt and pepper; grill chicken for 6-7 minutes per side until cooked through (165°F) and peppers for about 5-6 minutes until tender.
- Cook pasta in boiling salted water according to package instructions; drain and rinse under cold water.
- Whisk together balsamic vinegar, lemon zest, lemon juice, minced garlic, olive oil, salt, and pepper in a mixing bowl.
- In a large bowl, combine cooked pasta with fresh herbs and sliced grilled chicken and peppers; toss with the vinaigrette.
- Serve immediately or chill before serving.
