Ingredients
- 1 pound elbow macaroni
- 1 cup mayonnaise
- 1/4 cup sweet pickle relish
- 1/4 cup chopped celery
- 1/4 cup chopped onion
- 2 tablespoons apple cider vinegar
- 1 tablespoon yellow mustard
- Salt and pepper to taste
- Optional: 2-3 chopped hard-boiled eggs
Instructions
- Cook the elbow macaroni according to package directions until al dente. Drain using a colander and rinse under cold water.
- In a large mixing bowl, combine mayonnaise, sweet pickle relish, apple cider vinegar, yellow mustard, salt, and black pepper. Whisk until smooth.
- Fold the cooled macaroni into the dressing mixture along with the chopped celery and onion. Add chopped hard-boiled eggs if desired.
- Cover and refrigerate for at least one hour to let the flavors meld together before serving.
