  • 2 tsp. sea salt, divided
  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 8 oz. turkey strips
  • 2 Tbsp. extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  2. Cook turkey strips in a sauté pan over medium heat until dark red; set aside on paper towels.
  3. Sear seasoned chicken thighs in the same pan until browned, then remove.
  4. Sauté diced shallots for 2 minutes, add garlic for another 2 minutes.
  5. Deglaze pan with chicken broth; simmer for 3 minutes.
  6. Stir in butter and honey until melted; return chicken thighs to pan with thyme.
  7. Bake covered for 15 minutes; add sliced peaches and spoon more sauce over before broiling for 3-5 minutes until softened.
  8. Serve hot garnished with fresh herbs.
