Ingredients
- 1 lb chicken breast, cubed
- 1 cup pineapple chunks (fresh or canned)
- 2 cups cooked brown rice
- 2 tbsp soy sauce
- 3 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Chopped green onions and fresh cilantro for garnish
Instructions
- In a mixing bowl, whisk together honey, soy sauce, and minced garlic until well combined.
- Heat olive oil in a skillet over medium-high heat. Add cubed chicken and cook until golden brown on all sides.
- Pour the honey garlic sauce into the skillet with the chicken. Simmer until the sauce thickens, stirring occasionally.
- Add pineapple chunks to the skillet and cook for an additional 2–3 minutes until lightly caramelized.
- Serve the chicken and pineapple mixture over cooked brown rice in bowls.
- Garnish with chopped green onions and fresh cilantro before enjoying.
