Instructions
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Add fresh lemon juice and eggs; whisk until fully combined.
- Cook over medium heat, stirring constantly until the mixture reaches a gentle boil.
- Reduce heat and simmer for about one minute or until thickened while stirring continuously.
- Remove from heat and stir in butter and grated lemon rind until melted.
- Transfer to a bowl to cool at room temperature before refrigerating for at least six hours.
