  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash your bananas until you have about 2 1/4 cups.
  2. In a large bowl, mix together flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with both sugars. Add cinnamon, eggs, vanilla extract, and mashed bananas; blend well.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Pour the batter into a greased baking pan and insert a trivet into the Instant Pot with 1 cup of water.
  6. Cover the pan tightly with foil (creating a handle) and place it on the trivet inside the Instant Pot.
  7. Seal the lid and cook on manual for 50 minutes.
  8. Release pressure quickly when done, remove the pan using foil handles, and let cool before slicing.
