  • Total Time: 1 hour 20 minutes
  • Yield: About 12 servings 1x

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 1/4 tsp instant yeast
  • 1 1/4 cups cold whole milk or almond milk
  • 1 cup unsalted butter
  • 16 chocolate batons or 8 oz semi-sweet chocolate

Instructions

  1. In a bowl, combine flour, sugar, salt, and instant yeast. Gradually mix in cold milk until a soft dough forms; knead until smooth.
  2. Roll out the dough into a rectangle. Pound chilled butter between parchment paper into a flat rectangle and place on one half of the dough. Fold over the other half and seal edges.
  3. Roll out the dough again into a larger rectangle and perform three folds, chilling after each fold.
  4. Roll the dough thinly and cut triangles; place chocolate at the base and roll tightly from base to tip.
  5. Place shaped croissants on lined baking sheets, let rise until doubled, then preheat oven to 400°F (200°C) and bake for about 20 minutes until golden brown.
