Instructions
- In a mixing bowl, whisk egg whites and sugar until slightly foamy.
- Add almond flour, orange zest, and juice; mix until smooth.
- Form small balls from the mixture; use powdered sugar on hands if sticky.
- Place cookie balls on a parchment-lined baking sheet.
- Press an indent into each cookie and fill with orange marmalade.
- Chill cookies in the refrigerator for at least 15 minutes.
- Preheat oven to 175°C/356°F, then bake cookies for 12 minutes until slightly crispy.
- Transfer to a cooling rack; cool completely before dusting with powdered sugar.
