Ingredients
- 1 cup pastina pasta
- 1 brown onion
- 2 carrots
- 2 celery sticks
- 4 garlic cloves
- 6 cups vegetable broth (or chicken broth)
- Salt and black pepper to taste
- Optional garnishes: chopped parsley, grated parmesan cheese, olive oil
Instructions
- Chop the onion, carrots, celery, and garlic into manageable pieces.
- In a large pot, combine vegetable broth and chopped veggies. Season with salt, black pepper, and optional bay leaf. Simmer for about 20 minutes.
- Once vegetables are tender, remove the bay leaf and blend the mixture until smooth.
- Return the blended mixture to the pot with remaining broth; bring to a boil.
- Stir in pastina pasta and cook according to package instructions (about 5-6 minutes) until al dente.
- Serve hot with optional garnishes.
