Ingredients
- 1 medium-sized potato (300g)
- 2–3 tbsp rice flour
- 1 tbsp sugar
- ¼ tsp salt
- Shredded mozzarella cheese
- 1–2 tbsp oil (for frying)
Instructions
- Peel and chop the potato into large chunks, then steam for 10-15 minutes until soft.
- In a mixing bowl, mash the steamed potatoes and combine with rice flour, sugar, and salt until smooth.
- Scoop some dough into your palm, flatten it, place mozzarella cheese in the center, and wrap the dough around it to seal.
- Heat oil in a pan over medium-high heat; cook each side of the hotteok for about 10-12 minutes until golden brown.
