Ingredients
- 2 lbs boneless, skinless chicken thighs
- 2 Tbsp olive oil
- Juice of 2 lemons
- 2 tsp lemon zest
- 4 cloves garlic (minced)
- 2 Tbsp fresh thyme and rosemary
- Salt and black pepper (to taste)
Instructions
- In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, chopped thyme, rosemary, salt, and black pepper to create the marinade.
- Add the chicken thighs to the marinade and let sit for at least 10 minutes.
- Preheat your grill or grill pan over medium-high heat.
- Remove chicken from the marinade (discard leftover marinade) and place on the grill.
- Grill for about 6-7 minutes per side until the internal temperature reaches 165°F (75°C).
- Remove from the grill and let rest for 5 minutes before serving.
