- 1 head romaine lettuce (approximately 8 cups)
- 2 cups mandarin oranges (approximately 2 cans with juice)
- 1 1/4 cups sliced almonds
- 3/4 cup green onions (diced)
- 1/4 cup olive oil
- 1/8 cup mandarin orange juice
- 1/8 cup lemon juice
- 2 teaspoons apple cider vinegar
- 2 teaspoons dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
Instructions
- Cut the romaine lettuce into bite-sized pieces, rinse, and dry.
- In a large bowl, combine the romaine, mandarin oranges, sliced almonds, and chopped green onions.
- For the vinaigrette, mix olive oil, mandarin orange juice, lemon juice, apple cider vinegar, Dijon mustard, salt, and ground ginger in a mason jar and shake well.
- Pour some vinaigrette over the salad and toss gently to coat.
- Serve immediately or chill for later enjoyment.
