Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/3 cup maple syrup
- 2 large eggs
- 1 1/4 cups mashed bananas (3–4 bananas)
- 1 teaspoon vanilla extract
- 1/4 cup plain yogurt
- 3/4 cup walnuts or pecans, chopped
Instructions
- Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, sift together the flour, baking soda, and salt; set aside.
- In a mixer, cream together the softened butter and brown sugar until fluffy. Add the maple syrup and mix well.
- Incorporate the eggs one at a time, followed by the mashed bananas and vanilla extract until smooth.
- Gradually add half of the dry ingredients while mixing on low speed. Then mix in the yogurt before adding the remaining dry ingredients. Gently fold in chopped nuts.
- Pour the batter into the prepared loaf pan, top with reserved nuts, and bake for 50-60 minutes or until a toothpick comes out clean.
- Drizzle warm maple syrup over the baked bread before allowing it to cool completely in the pan.
