  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup walnuts or pecans, chopped

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together the flour, baking soda, and salt; set aside.
  3. In a mixer, cream together the softened butter and brown sugar until fluffy. Add the maple syrup and mix well.
  4. Incorporate the eggs one at a time, followed by the mashed bananas and vanilla extract until smooth.
  5. Gradually add half of the dry ingredients while mixing on low speed. Then mix in the yogurt before adding the remaining dry ingredients. Gently fold in chopped nuts.
  6. Pour the batter into the prepared loaf pan, top with reserved nuts, and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Drizzle warm maple syrup over the baked bread before allowing it to cool completely in the pan.
