Ingredients
- 1 bunch of celery (about 10 stalks)
- 1 medium red onion
- 2 garlic cloves
- 1/2 cup red apple vinegar
- 1/3 cup olive oil
- 2 1/2 tablespoons capers
- 1 tablespoon chopped oregano
- 1 tablespoon chopped parsley
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- Cut celery into ½-inch diagonal slices and coarsely chop the leaves. Place in a large mixing bowl.
- Add sliced red onion, chopped garlic, red apple vinegar, olive oil, coarsely chopped capers, oregano, parsley, salt, black pepper, and red pepper flakes.
- Toss all ingredients together until well combined. Adjust seasonings to taste.
- Cover the bowl and refrigerate for at least one hour or up to four hours to allow flavors to meld.
