Instructions
- Boil the corn by bringing 240 ml of water to a boil in a saucepan. Stir in the sugar until dissolved. Add frozen corn and simmer for 3 to 5 minutes until heated through.
- In a mixing bowl, combine mayonnaise, sour cream, sriracha sauce, kosher salt, and lime salt.
- Drain the corn, allow it to cool slightly, then fold it into the sauce until evenly coated.
- Serve in individual cups topped with cotija cheese, cilantro, chili powder, and lime wedges.
