Instructions
- Preheat your oven to 350°F and prepare a mini muffin pan with cooking spray or liners.
- In a large bowl, combine mashed bananas, maple syrup, melted butter, egg, and vanilla until smooth.
- Add flour, baking soda, cinnamon, and salt to the wet mixture; stir gently until just combined. Fold in any desired mix-ins.
- Spoon the batter into the prepared muffin pan, filling each cup about two-thirds full.
- Bake for 10 to 12 minutes or until lightly golden on the edges. Cool in the pan for five minutes before transferring to a wire rack.
