- 1 Cup Andes Mints (roughly chopped)
- 1 Cup semi-sweet chocolate chips
- 1 Tablespoon salted butter
- 7 Cups Rice Chex cereal
- 2 Cups powdered sugar
- Optional mix-ins: Mint-flavored cookies (chopped), green M&Ms
Instructions
- In a large microwave-safe bowl, combine chopped Andes Mints, semi-sweet chocolate chips, and salted butter. Microwave on high for 30 seconds; stir until smooth. If needed, continue heating in increments of 10 to 15 seconds.
- Add the Rice Chex cereal to the melted mixture and gently fold until coated.
- Sprinkle half the powdered sugar over the mixture, shake to distribute, then add the remaining sugar and shake again until well-coated.
- Spread the mixture onto aluminum foil or parchment paper to cool.
- Once set, transfer to a serving bowl and mix in any additional toppings.
