- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1/2 cup orange juice
- 1/4 cup apple juice
Instructions
- Preheat oven to 325°F (160°C) and prepare a 9×5-inch loaf pan by greasing it and lining it with parchment paper.
- In a mixing bowl, cream softened butter and sugar until light and fluffy. Gradually add eggs, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Alternately add dry ingredients and fruit juices to the butter mixture until combined.
- Gently fold in dried fruits and nuts until evenly distributed.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 60-75 minutes or until a toothpick inserted comes out clean.
- Cool completely before serving.
