- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- ¼ teaspoon paprika
- 4–6 slices of turkey bacon
- 2 tablespoons yellow mustard
- ¼ cup honey
- 1 tablespoon mayonnaise
- 1 teaspoon dried onion flakes
- 1 cup sliced mushrooms
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
Instructions
- Preheat your oven to 350°F. In a cast iron skillet, cook the turkey bacon until crispy, then set aside on paper towels. Season chicken breasts with salt, pepper, and paprika. Brown each chicken breast in the same skillet until golden.
- In a mixing bowl, combine mustard, honey, mayonnaise, and onion flakes; mix well. Spread this sauce over each browned chicken breast.
- Top each chicken breast with turkey bacon slices, followed by both types of shredded cheese and sliced mushrooms.
- Bake in the preheated oven for about 20 minutes or until the cheese is melted and the chicken reaches an internal temperature of 165°F.
