  • 4 chicken drumsticks (bone-in)
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 ½ cups uncooked rice
  • 1 ½ cups chicken stock
  • 1 ¼ cups water
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F.
  2. Spread chopped onion in a baking dish and dot with butter. Bake for 15 minutes until onions are browned.
  3. Mix seasonings in a bowl and coat the chicken drumsticks thoroughly.
  4. Sprinkle uncooked rice over the onions and pour in chicken stock and water. Add minced garlic and mix gently.
  5. Place seasoned chicken on top of the rice mixture and cover with foil. Bake for 30 minutes.
  6. Remove foil, spray chicken with oil spray for browning, then bake uncovered until cooked through.
