Ingredients
- 4 chicken drumsticks (bone-in)
- 1 onion (chopped)
- 2 garlic cloves (minced)
- 1 ½ cups uncooked rice
- 1 ½ cups chicken stock
- 1 ¼ cups water
- 2 tablespoons butter
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¾ teaspoon salt
- Black pepper
Instructions
- Preheat your oven to 350°F.
- Spread chopped onion in a baking dish and dot with butter. Bake for 15 minutes until onions are browned.
- Mix seasonings in a bowl and coat the chicken drumsticks thoroughly.
- Sprinkle uncooked rice over the onions and pour in chicken stock and water. Add minced garlic and mix gently.
- Place seasoned chicken on top of the rice mixture and cover with foil. Bake for 30 minutes.
- Remove foil, spray chicken with oil spray for browning, then bake uncovered until cooked through.
