Ingredients
- 200 g granulated sugar
- 115 g unsalted butter, softened
- 2 large eggs
- 1 tablespoon freshly grated lemon zest
- 60 ml freshly squeezed lemon juice
- 190 g all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 120 ml whole milk
- 120 g powdered sugar (for glaze)
- 2 tablespoons lemon juice (for glaze)
Instructions
- Preheat your oven to 175°C (350°F). Grease and line a 23 cm round cake pan with parchment paper.
- In a large mixing bowl, beat together the softened butter and sugar until pale and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon zest and lemon juice until combined.
- Add the flour, baking powder, and salt to the mixture, stirring gently until just combined.
- Gradually mix in the milk until you achieve a smooth batter.
- Pour the batter into the prepared cake pan and smooth out the top.
- Bake for 30–35 minutes or until a skewer inserted comes out clean.
- While baking, whisk powdered sugar with lemon juice to create a glaze.
- Once baked, let the cake cool for 10 minutes before transferring it to a wire rack. Drizzle with glaze while still warm.
