- 2 tbsp. minced red onion
- ¼ tsp. salt (or more to taste)
Instructions
- In a large mixing bowl, combine the cooked shredded chicken, mayonnaise, crumbled cojita cheese, ají amarillo paste, lime juice, cilantro, garlic, red onion, and salt.
- Gently fold the ingredients together using a spoon or spatula until well combined and evenly coated.
- Serve immediately over lettuce or as a sandwich filling.
