Ingredients
- 4 large ripe plantains
- 1 lb ground beef
- 2 tsp adobo seasoning
- 1 tbsp sazon seasoning
- 1 onion, minced
- 3 garlic cloves, minced
- 1 green bell pepper, minced
- ¼ cup fresh cilantro, chopped
- ⅓ cup olives or capers
- 1 cup tomato sauce
- 2 cups dairy-free cheese
- 3 large eggs, beaten
- Coconut oil for frying
Instructions
- Preheat your oven to 356°F (180°C).
- Grease a casserole dish with coconut oil.
- In a mixing bowl, season ground beef with adobo and sazon.
- In a skillet, heat coconut oil and sauté onion, garlic, and bell pepper until soft. Add cilantro last.
- Cook the seasoned ground beef in the skillet until browned; stir in tomato sauce and olives/capers. Simmer for 5-10 minutes.
- Cut plantains lengthwise and remove skins; slice into strips.
- Fry plantain strips in coconut oil until golden brown on both sides.
- Assemble layers: start with plantains at the bottom, add an egg wash, layer meat mixture, and sprinkle cheese; repeat layers.
- Finish with a final layer of plantains topped with egg wash and cheese.
- Bake for about 20 minutes until golden brown.
