  • 4 large ripe plantains
  • 1 lb ground beef
  • 2 tsp adobo seasoning
  • 1 tbsp sazon seasoning
  • 1 onion, minced
  • 3 garlic cloves, minced
  • 1 green bell pepper, minced
  • ¼ cup fresh cilantro, chopped
  • ⅓ cup olives or capers
  • 1 cup tomato sauce
  • 2 cups dairy-free cheese
  • 3 large eggs, beaten
  • Coconut oil for frying

Instructions

  1. Preheat your oven to 356°F (180°C).
  2. Grease a casserole dish with coconut oil.
  3. In a mixing bowl, season ground beef with adobo and sazon.
  4. In a skillet, heat coconut oil and sauté onion, garlic, and bell pepper until soft. Add cilantro last.
  5. Cook the seasoned ground beef in the skillet until browned; stir in tomato sauce and olives/capers. Simmer for 5-10 minutes.
  6. Cut plantains lengthwise and remove skins; slice into strips.
  7. Fry plantain strips in coconut oil until golden brown on both sides.
  8. Assemble layers: start with plantains at the bottom, add an egg wash, layer meat mixture, and sprinkle cheese; repeat layers.
  9. Finish with a final layer of plantains topped with egg wash and cheese.
  10. Bake for about 20 minutes until golden brown.
