Ingredients

  • ⅓ cup canned pumpkin
  • ¼ teaspoon cinnamon
  • ½ cup honey
  • ½ cup vanilla protein powder
  • 1 ½ cups rolled oats
  • salt (to taste)
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup mini chocolate chips

Instructions

  1. In a mixing bowl, combine almond butter, pumpkin, honey, vanilla protein powder, rolled oats, cinnamon, salt, and pumpkin pie spice. Mix until well combined.
  2. Gently fold in mini chocolate chips.
  3. Use a cookie scoop or your hands to form the mixture into balls and place them on a baking sheet lined with parchment paper (yielding about 26 balls).
  4. Chill in the refrigerator until firm.
