Ingredients
- 1 lb smoked beef sausage, sliced
- 4 medium potatoes, peeled and diced
- 1 small head of cabbage, chopped
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp olive oil
- 1/2 tsp salt (more to taste)
- 1/4 tsp black pepper
- 1 tsp smoked paprika (optional for extra flavor)
- 1/2 tsp dried thyme
Instructions
- Prepare all ingredients: slice the beef sausage, dice the potatoes, chop the cabbage and onion, and mince the garlic.
- In a slow cooker, combine sliced beef sausage, diced potatoes, chopped cabbage, onion, and garlic.
- Drizzle with olive oil and season with salt, pepper, paprika (if using), and thyme.
- Pour in chicken broth until ingredients are just covered.
- Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until everything is tender.
- Stir before serving; garnish with fresh parsley if desired.
