- 2 cups all-purpose or gluten-free flour
- 2 tsp baking powder

- 1 tsp ground cinnamon
- 8 tbsp butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 1 cup mashed bananas (about 2 bananas)
- ⅓ cup maple syrup
- 2 tsp vanilla extract
- 3 large eggs
- ¾ cup buttermilk
- For the Toffee Sauce: 8 tbsp butter
- ¾ cup packed brown sugar
- ¾ cup heavy cream
- 1 tsp vanilla extract
Instructions
- 1. Preheat the oven to 350°F (175°C). Prepare a deep baking dish by spraying it with nonstick spray.
- 2. In a mixing bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
- 3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
- 4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- 5. Pour batter into the prepared dish and bake for 45-55 minutes. Check doneness with a toothpick.
- 6. For the toffee sauce, melt butter and brown sugar over medium-low heat; stir until smooth. Add heavy cream and vanilla; cook without boiling for an additional five minutes.
- 7. After the cake cools slightly, poke holes in the top and pour over warm toffee sauce. Allow the cake to soak for at least one hour before serving.
