  • Total Time: 1 hour 10 minutes
  • Yield: Approximately 14 servings 1x

Ingredients

Scale
  • 2 cups all-purpose or gluten-free flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • 1 tsp ground cinnamon
  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 large eggs
  • ¾ cup buttermilk
  • For the Toffee Sauce: 8 tbsp butter
  • ¾ cup packed brown sugar
  • ¾ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 350°F (175°C). Prepare a deep baking dish by spraying it with nonstick spray.
  2. 2. In a mixing bowl, cream together granulated sugar, brown sugar, and butter until light and fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. 3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. 4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. 5. Pour batter into the prepared dish and bake for 45-55 minutes. Check doneness with a toothpick.
  6. 6. For the toffee sauce, melt butter and brown sugar over medium-low heat; stir until smooth. Add heavy cream and vanilla; cook without boiling for an additional five minutes.
  7. 7. After the cake cools slightly, poke holes in the top and pour over warm toffee sauce. Allow the cake to soak for at least one hour before serving.
